Plaice Fillet Skinless

Plaice is one of the most popular eating fish in the UK. The pure white fillets have a fine and delicate flavour. The fillets are not too thick and are often baked rolled and stuffed. Best eaten fresh a fresh Plaice has bright orange spots on the thick tough skin that is easily peeled off whole. The flesh is soft and tender and should not be overcooked. Plaice is not at its best during the spawning season (March-April) when the flesh becomes flabby and watery.
More Plaice is sold in the UK than any other flatfish. They are easy to recognize by the bright spots on the greenish-brown skin and white underside. Plaice is a right handed flatfish with a bony ridge behind the eyes and a strong bony mouth. Plaice is found from Iceland to the Mediterranean preferring sandy and gravelly seabed’s often in shallow waters where they feast on their favourite food – mussels. They grow to 60cm and 3.5kg although 250g – 2kg are more common. The minimum legal landing size is 22cm.
