Coley Fillet

Coley or Saithe is from the cod family with a very dark skin – hence the name Coley. The flesh has a greyish tint as well but flavour and texture are as good as cod. Coley is popular for fish pies where the greyish looks can be disguised.
Coley is widely distributed in the Scottish North Atlantic. They gather in small shoals often in deep waters. Stocks of Coley are plentiful and sustainable and is recommended as safe and ethical alternative to Cod.
Coley is sometimes regarded as inferior to Cod mainly due to the greyish colour of the flesh although taste and texture are light and fine very similar to Cod.
