Bream Fillet

Bream is very versatile and can be grilled fried baked or steamed and is popular as sushi and sashimi. The meaty firm and dense flesh is white with a light and mild flavour. Smaller fish are best cooked and served on the bone.
Sea Breams are a large family of fish that prefer the temperate waters of the Mediterranean and the African coast feeding mainly inshore on algae and larvae. They include the gilthead bream yellow banded bream black bream red bream and Pink Bream. They all have the typical high backed flat body with a large mouth and large teeth the dorsal fin has sharp spines.
The Gilthead Bream is the most popular Bream. It grows to 40-70cm and 2-4kg in weight and is widely farmed in the Mediterranean. Farmed fish are usually sold from 400-900g and are available all year round. The Pink Bream is smaller and is found along the South coast of Britain and are considered “fish to avoid” due to over fishing.
